Ingredients:
- 1 cup sabudana (tapioca pearls)
- 3 medium-sized potatoes, boiled and grated
- 2-3 green chillies
- Coriander leaves
- Curry leaves
- 2 tsp cumin seeds
- 4 tbs Roasted peanut powder
- Salt to taste
- Oil for frying
- Dip of your choice
Instructions:
- Soak the sabudana in water for 2-3 hours until it becomes soft and translucent.
- Boil the potatoes, peel them, and grate them.
- In a mixer grinder, blend 2-3 green chillies, coriander leaves, and curry leaves to make a fine paste.
- Mix the grated potatoes with the soaked sabudana in a large bowl.
- Add the green chilli paste, 2 tsp cumin seeds, and some curry leaves to the mixture.
- Sprinkle salt and roasted peanut powder into the mixture. Mix everything well.
- Heat oil in a pan for frying.
- Meanwhile, apply a bit of oil to your palms and shape the mixture into round, flat tikkis.
- Once the oil is hot, carefully place the sabudana vadas in the pan and fry until they turn golden brown on both sides.
- Remove the vadas from the pan and place them on a paper towel to absorb excess oil.
- Serve the sabudana vadas with a dip of your choice, such as mint chutney or yogurt-based dip.
